The king of Italian desserts!


• 300g sponge fingers

• 35cl strong cold coffee

• 5 eggs

• 150g caster sugar

• 250g Casa Azzurra mascarpone

• 1 tablespoon of amaretto

• 1 tablespoon of bitter cocoa


1. Mix the egg yolks and sugar.

2. Slowly add the mascarpone, then the amaretto and mix until smooth and well combined.

3. Beat the egg whites until stiff, then fold into the mixture.

4. Soak the biscuits in the coffee.

5. Cover the bottom of a square tin with a layer of biscuits, then add a layer of mascarpone mixture with a spatula.

6. Smooth the top.

7. Repeat with another layer of biscuits and mixture.

8. Sprinkle with bitter cocoa.

9. Refrigerate for 2 hours.
